Simple Guacamole Recipe for Poolside Snacking

Avocados are a nutrient powerhouse that are not only good for you but delicious to eat! Did you know that avocados were a fruit? In every one ounce serving of avocado there are almost 20 vitamins, minerals and phytonutrients in addition to 2 grams of fiber.(1) Avocados can be used in sandwiches, as a topping for burgers or salads and even make a great ice cream!
The most popular way to enjoy avocados is in guacamole. Guacamole is easy to make and when paired with whole grain crackers, whole grain tortilla chips or vegetables – it can be a healthy snack too. If you have not made guacamole before, do not be intimidated. It is really simple and the combinations of flavors are limited only by your imagination. Start with this simple guacamole recipe and build on it. The next time you need a snack to bring for an afternoon by the pool you will have a great recipe for guacamole!
Simple Guacamole Recipe
- 2 large ripe avocados, peeled
- 1 tablespoon fresh lime juice
- 1/4 teaspoon kosher salt
- 1 garlic clove, minced
- 2 tablespoons chopped fresh cilantro
Place avocados in a medium bowl, and mash roughly with a fork. Add fresh lime juice, kosher salt, and minced garlic clove; mash to desired consistency. Stir in chopped fresh cilantro.
Feel free to add chopped tomatoes, mangos, peaches, jalapenos or any veggie or fruit you like. You can make your own signature guacamole – the possibilities are endless!
